Ninh Binh cuisine & Ninh Binh specialties



Ninh Binh cuisine is famous for specialties :

- De Nui (goats) : Goats in Ninh Binh grow on limestone mountains, and locals have their own secret in processing goat meat with many delicious dishes, especially is the rare goat meat. Goat meat is crushed into thin slices and mixed with various spices before displaying in plates. Served with ginger, chilli, lemon, seasoning powder and citronella.

- Mien Luon (eels vermicelli) : The eels and vermicelli are carefully selected and processed before given to diners. Served with fish sauce, shrimp paste, lemon, pepper, chilly and herbs. Another important ingredient is banana flowers which make this dish more special and delicious.

- Nem Chua (fermented spring roll) : It has long been a familiar dish for local people as well as visitors. The fermented spring roll is covered with guava leaves before rolling in banana leaves. This dish is served with fish sauce mixed with chilli, lemon and garlic.

- Com Chay (burned cooked rice) : It's made from cooked rice, sliced into round shapes. After cooled down, the round slices are soaked into hot oil pan until they turn yellow. Beef and pig (heart and kidney) are crushed into thin slices and mixed with spices and ingredients like tomato, carrot, onion and mushroom. Then, the mixture is well-fried and put into the Com Chay bowl.

- Ruou Kim Son (wine) : This is a popular kind of wine in Ninh Binh, with typical flavor of yellow rice fields. Although it is strong, it will not make you headache; instead, it may bring you ecstatic feeling. Kim Son wine is more delicious and fragrant smell over time.
